  • 4 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • 1 tsp Italian seasoning

  • 3 cloves garlic, minced

  • ½ cup sun-dried tomatoes (in oil), chopped

  • 1 cup chicken broth

  • ¾ cup heavy cream

  • ½ cup grated Parmesan cheese

  • ¼ tsp red pepper flakes (optional)

  • Fresh basil or parsley, for garnish


Instructions

  1. Season and sear: Season chicken with salt, pepper, and Italian seasoning. In a skillet, heat olive oil over medium-high heat and sear chicken until golden (4–5 minutes per side). Remove and set aside.

  2. Make the sauce: In the same skillet, sauté garlic and sun-dried tomatoes for 1 minute. Add chicken broth and simmer for 2–3 minutes.

  3. Creamy blend: Stir in cream, Parmesan, and red pepper flakes. Simmer until slightly thickened.

  4. Return chicken: Place chicken back in the skillet, spoon sauce over the top, and simmer for 8–10 minutes until cooked through.

  5. Serve: Garnish with fresh herbs and serve with pasta, mashed potatoes, or crusty bread.

Notes

  • For a richer sauce, add a tablespoon of butter at the end.

  • Slice the chicken breasts in half lengthwise for faster cooking.
