8 ounces pasta of your choice (fettuccine or penne)
1 teaspoon Italian seasoning
Fresh basil, for garnish
Instructions
Season both sides of the chicken breasts with salt and pepper.
In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side until golden and cooked through. Remove from the pan and set aside.
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
Add the cherry tomatoes and sun-dried tomatoes, cooking for another 2-3 minutes until the tomatoes start to soften.
Pour in the chicken broth and heavy cream, stirring well to combine. Bring to a gentle simmer.
Gradually add the grated Parmesan cheese, stirring until melted and the sauce is creamy and thick.
While the sauce simmers, cook the pasta according to package instructions until al dente.
Slice the chicken into strips and return it to the skillet. Add the cooked pasta and Italian seasoning, tossing until the pasta is fully coated in sauce.
Plate the pasta and garnish with fresh basil.
