  • 1 lb boneless, skinless chicken breasts (or thighs), diced
  • 4 cloves garlic, minced
  • 1 small onion, chopped
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional, for heat)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • 1 cup small pasta (orzo or ditalini)
  • Salt & black pepper, to taste
  • Fresh basil, for garnish

Instructions

1️⃣ Sauté the Aromatics – In a large pot over medium heat, heat olive oil and sauté onions and garlic until fragrant (about 2 minutes).

2️⃣ Cook the Chicken – Add diced chicken, season with salt, pepper, Italian seasoning, and red pepper flakes. Sauté until lightly golden, about 5 minutes.

3️⃣ Build the Broth – Pour in chicken broth and sun-dried tomatoes. Bring to a gentle boil, then add pasta and cook until tender (8-10 minutes).

4️⃣ Make It Creamy – Lower heat, stir in heavy cream and Parmesan cheese, and let simmer for 5 minutes until thickened.

5️⃣ Add Greens & Serve – Stir in baby spinach until wilted, then garnish with fresh basil before serving hot.

Notes

Prefer a thicker soup? Mash some cooked potatoes or add a cornstarch slurry.
Low-carb option – Skip the pasta and add cauliflower rice instead!
Want extra richness? Add 1 tbsp of butter at the end for a velvety finish
