This Marry Me Chicken Soup takes all the creamy, rich flavors of the beloved Marry Me Chicken dish and transforms them into a cozy, comforting bowl of warmth. Loaded with tender chicken, sun-dried tomatoes, and a creamy Parmesan broth, it’s perfect for chilly days or when you need a little extra love in a bowl!
Ingredients
- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breasts (or thighs), diced
- 4 cloves garlic, minced
- 1 small onion, chopped
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional, for heat)
- 4 cups chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes, chopped
- 2 cups baby spinach
- 1 cup small pasta (orzo or ditalini)
- Salt & black pepper, to taste
- Fresh basil, for garnish
Instructions
1️⃣ Sauté the Aromatics – In a large pot over medium heat, heat olive oil and sauté onions and garlic until fragrant (about 2 minutes).
2️⃣ Cook the Chicken – Add diced chicken, season with salt, pepper, Italian seasoning, and red pepper flakes. Sauté until lightly golden, about 5 minutes.
3️⃣ Build the Broth – Pour in chicken broth and sun-dried tomatoes. Bring to a gentle boil, then add pasta and cook until tender (8-10 minutes).
4️⃣ Make It Creamy – Lower heat, stir in heavy cream and Parmesan cheese, and let simmer for 5 minutes until thickened.
5️⃣ Add Greens & Serve – Stir in baby spinach until wilted, then garnish with fresh basil before serving hot.
