Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper to taste
  • Fresh basil for garnish

Instructions

1️⃣ Season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the salmon for 3-4 minutes per side. Remove and set aside.
2️⃣ In the same pan, sauté garlic and sun-dried tomatoes for 1-2 minutes. Pour in chicken broth and heavy cream, stirring to combine.
3️⃣ Add Parmesan cheese, Italian seasoning, and red pepper flakes. Let the sauce simmer until slightly thickened.
4️⃣ Return the salmon to the skillet and let it simmer in the sauce for 3-5 minutes until fully cooked.
5️⃣ Garnish with fresh basil and serve with pasta, rice, or roasted vegetables.
