- 8 oz pasta (fettuccine or linguine)
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup Parmesan cheese, grated
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil, chopped (for garnish)
Instructions
- Cook pasta according to package directions, drain, and set aside.
- In a large skillet, heat olive oil over medium heat. Add shrimp and cook for 2-3 minutes per side until pink. Remove shrimp and set aside.
- In the same skillet, add garlic and cook for 1 minute.
- Stir in sun-dried tomatoes, heavy cream, and chicken broth. Bring to a simmer.
- Add Parmesan cheese and red pepper flakes. Stir until the sauce thickens (about 3–5 minutes).
- Return shrimp to the skillet and toss to coat. Add pasta and mix well.
- Season with salt and pepper to taste. Garnish with fresh basil and serve warm!
Notes
- For added flavor, sprinkle extra Parmesan on top before serving.
- Use fresh or frozen shrimp, depending on availability.
