Ingredients

  • 8 oz pasta (fettuccine or linguine)
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil, chopped (for garnish)

Instructions

  • Cook pasta according to package directions, drain, and set aside.
  • In a large skillet, heat olive oil over medium heat. Add shrimp and cook for 2-3 minutes per side until pink. Remove shrimp and set aside.
  • In the same skillet, add garlic and cook for 1 minute.
  • Stir in sun-dried tomatoes, heavy cream, and chicken broth. Bring to a simmer.
  • Add Parmesan cheese and red pepper flakes. Stir until the sauce thickens (about 3–5 minutes).
  • Return shrimp to the skillet and toss to coat. Add pasta and mix well.
  • Season with salt and pepper to taste. Garnish with fresh basil and serve warm!

Notes

  • For added flavor, sprinkle extra Parmesan on top before serving.
  • Use fresh or frozen shrimp, depending on availability.
