4 chicken thighs (bone-in, skin-on)
2 tablespoons olive oil
2–3 tablespoons chipotle honey sauce
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and pepper to taste
2 pounds russet potatoes, peeled and cubed
4 tablespoons unsalted butter
1 cup milk
1 cup smoked Gouda cheese, shredded
Chives for garnish (optional)
Instructions
Preheat your oven to 425°F (220°C).
Mix chipotle honey sauce, smoked paprika, garlic powder, salt, and pepper in a bowl. Place chicken thighs in a zip-top bag or bowl and coat with marinade.
In a large pot, add cubed potatoes, cover with cold water, sprinkle with salt, and boil. Reduce heat and simmer for 15-20 minutes until fork-tender.
In a large oven-safe skillet, heat olive oil over medium-high heat. Sear chicken thighs skin-side down for about 5-7 minutes. Flip and add remaining marinade.
Transfer the skillet to the preheated oven and bake for 25-30 minutes until chicken reaches an internal temp of 165°F (75°C).
Drain potatoes, return to pot, and add butter, milk, and smoked Gouda. Mash until creamy and season with salt and pepper.
Once the chicken is done, let it rest for a few minutes. Serve chicken thighs atop mashed potatoes, drizzled with chipotle honey and sprinkled with chives.
