4 large eggs
200 grams of feta cheese, crumbled
1 cup of cherry tomatoes, halved
2 tablespoons of olive oil
1 teaspoon of dried oregano
1 teaspoon of red pepper flakes
Salt and black pepper, to taste
Fresh basil or parsley, for garnish
Sourdough or pita, for serving
Instructions
Preheat your oven to 375°F (190°C).
In a medium-sized baking dish, drizzle a tablespoon of olive oil and spread the halved cherry tomatoes around the dish.
Crumble the feta over the cherry tomatoes.
Sprinkle the dried oregano, red pepper flakes, and a pinch of salt and black pepper over the cheese and tomatoes.
Carefully crack the eggs directly on top of the feta and tomatoes.
Drizzle the remaining olive oil over everything and bake for about 25-30 minutes until the eggs are set but the yolks are still runny.
