1 cup cooked quinoa
1 cup cherry tomatoes, halved
1 cucumber, diced
½ cup red onion, finely chopped
¼ cup fresh parsley or mint, chopped
1 cup plain Greek yogurt
1 tablespoon lemon juice
1 teaspoon dried dill
Instructions
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the ground beef, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
