1 pound of boneless, skinless chicken breasts, diced into bite-sized pieces
2 tablespoons of olive oil
1 medium of red onion, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 cups of zucchini, sliced into half-moons
3 cloves of fresh garlic, minced
1 teaspoon of dried oregano
1 teaspoon of dried basil
Salt and pepper to taste
1 lemon, juiced
Optional: 1/4 cup of feta cheese, crumbled
Season the diced chicken with salt, pepper, and half of the oregano and basil.
In a large skillet or wok, heat the olive oil over medium-high heat.
Carefully place the chicken in the hot oil and allow it to brown for about 5-7 minutes.
Toss in the red onion, red and yellow bell peppers, and zucchini, then stir fry for about 3-4 minutes.
Add the minced garlic and remaining herbs, stirring for just a minute.
Squeeze the juice of one lemon over the stir fry and, if using, sprinkle feta cheese on top.
Remove from heat, adjust seasoning if necessary, and serve hot.
