  • 1 pound of boneless, skinless chicken breasts, diced into bite-sized pieces
  • 2 tablespoons of olive oil
  • 1 medium of red onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups of zucchini, sliced into half-moons
  • 3 cloves of fresh garlic, minced
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and pepper to taste
  • 1 lemon, juiced
  • Optional: 1/4 cup of feta cheese, crumbled

  • Instructions

  • Season the diced chicken with salt, pepper, and half of the oregano and basil.
  • In a large skillet or wok, heat the olive oil over medium-high heat.
  • Carefully place the chicken in the hot oil and allow it to brown for about 5-7 minutes.
  • Toss in the red onion, red and yellow bell peppers, and zucchini, then stir fry for about 3-4 minutes.
  • Add the minced garlic and remaining herbs, stirring for just a minute.
  • Squeeze the juice of one lemon over the stir fry and, if using, sprinkle feta cheese on top.
  • Remove from heat, adjust seasoning if necessary, and serve hot.
