Ingredients

  • 1 tbsp olive oil

  • 1 small red onion, sliced

  • 2 garlic cloves, minced

  • 1 red bell pepper, sliced

  • 1 zucchini, sliced

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • Salt and pepper to taste

  • ½ tsp dried oregano

  • 2 tbsp chopped fresh parsley

  • Optional toppings: crumbled feta, lemon wedges


Instructions

  1. Cook beef: In a skillet over medium heat, cook ground beef until browned. Drain excess fat and set aside.

  2. Sauté veggies: In the same skillet, heat olive oil. Sauté onion, garlic, bell pepper, and zucchini until tender, about 5–6 minutes.

  3. Season: Return beef to pan. Stir in cumin, paprika, oregano, salt, and pepper. Cook for another 2–3 minutes.

  4. Garnish & serve: Sprinkle with parsley and optional feta. Serve with rice, couscous, or warm pita bread.
