Ingredients

1 lb ground beef

1 tbsp olive oil

1 small red onion, sliced

2 garlic cloves, minced

1 red bell pepper, sliced

1 zucchini, sliced

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper to taste

½ tsp dried oregano

2 tbsp chopped fresh parsley

Instructions

Cook beef: In a skillet over medium heat, cook ground beef until browned. Drain excess fat and set aside.

Sauté veggies: In the same skillet, heat olive oil. Sauté onion, garlic, bell pepper, and zucchini until tender, about 5–6 minutes.

Season: Return beef to pan. Stir in cumin, paprika, oregano, salt, and pepper. Cook for another 2–3 minutes.

Garnish & serve: Sprinkle with parsley and optional feta. Serve with rice, couscous, or warm pita bread.
