1 pound (450g) ground beef
1 medium onion, diced
2 cloves fresh garlic, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 large zucchini, diced
1 cup cherry tomatoes, halved
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper, to taste
Fresh parsley, chopped for garnish
Heat a large skillet or wok over medium-high heat and add the olive oil.
Add the ground beef to the pan in a single layer and let it brown on one side for 2-3 minutes.
Break up the beef and cook until browned and no longer pink. Drain excess fat if needed.
Add the diced onion and minced garlic. Cook until the onion turns translucent, about 2 minutes.
