Instructions
- Preheat your oven to 400°F (200°C).
- Slice the eggplants into rounds about 1 inch thick and place them in a large bowl.
- Drizzle the olive oil over the eggplant rounds and toss to coat evenly.
- Sprinkle garlic powder, smoked paprika, ground cumin, dried oregano, salt, and pepper over the eggplants and mix well until fully coated.
- Arrange the seasoned eggplant rounds on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, turning halfway through, until golden brown and tender.
- Remove from the oven and garnish with freshly chopped parsley before serving.
