  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, finely chopped
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Optional: a sprinkle of feta cheese

  • Instructions

  • In a large skillet over medium heat, add a splash of olive oil. Once hot, toss in the shrimp. Sauté for about 2-3 minutes on each side until they turn pink and are cooked through.
  • While the shrimp sauté, chop the avocados, halved cherry tomatoes, diced cucumber, and finely chopped red onion.
  • Once the shrimp are ready, transfer them to a bowl to cool slightly.
  • In a large mixing bowl, combine the diced avocados, cherry tomatoes, cucumber, red onion, and chopped parsley. Add the sautéed shrimp, and gently toss everything together.
  • Drizzle with olive oil and lemon juice. Season with salt and pepper to taste.
  • Give it one final, gentle toss. If you’re feeling fancy, sprinkle some feta cheese on top.
  • Taste and adjust the seasoning again if necessary.
