1 lb large shrimp, peeled and deveined
2 ripe avocados, diced
1 cup cherry tomatoes, halved
1 small red onion, finely chopped
1 cucumber, diced
1/4 cup fresh parsley, chopped
2 tablespoons olive oil
Juice of 1 lemon
Salt and pepper to taste
Optional: a sprinkle of feta cheese
Instructions
In a large skillet over medium heat, add a splash of olive oil. Once hot, toss in the shrimp. Sauté for about 2-3 minutes on each side until they turn pink and are cooked through.
While the shrimp sauté, chop the avocados, halved cherry tomatoes, diced cucumber, and finely chopped red onion.
Once the shrimp are ready, transfer them to a bowl to cool slightly.
In a large mixing bowl, combine the diced avocados, cherry tomatoes, cucumber, red onion, and chopped parsley. Add the sautéed shrimp, and gently toss everything together.
Drizzle with olive oil and lemon juice. Season with salt and pepper to taste.
Give it one final, gentle toss. If you’re feeling fancy, sprinkle some feta cheese on top.
Taste and adjust the seasoning again if necessary.
