9 oz of cheese tortellini
1 cup of cherry tomatoes, halved
1 small cucumber, diced
1 bell pepper, diced
1/2 red onion, finely chopped
1/2 cup of feta cheese, crumbled
1/4 cup of olives, pitted and sliced
1/4 cup of fresh parsley, chopped
1/4 cup of olive oil
Juice of 1 lemon
1 clove of garlic, minced
1/2 teaspoon of dried oregano
Salt and pepper to taste
Start by cooking the tortellini according to the package instructions.
While the tortellini is cooking, prep your veggies. Chop the cherry tomatoes, cucumber, bell pepper, and red onion.
Once the tortellini is done, drain and rinse under cold water.
In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, olives, and parsley.
In a separate bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
Pour the dressing over the salad and gently toss to combine.
Taste and adjust seasoning as needed.
Let the salad sit for at least 10-15 minutes before serving.
