  • 9 oz of cheese tortellini
  • 1 cup of cherry tomatoes, halved
  • 1 small cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of olives, pitted and sliced
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of olive oil
  • Juice of 1 lemon
  • 1 clove of garlic, minced
  • 1/2 teaspoon of dried oregano
  • Salt and pepper to taste

  • Instructions

  • Start by cooking the tortellini according to the package instructions.
  • While the tortellini is cooking, prep your veggies. Chop the cherry tomatoes, cucumber, bell pepper, and red onion.
  • Once the tortellini is done, drain and rinse under cold water.
  • In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, olives, and parsley.
  • In a separate bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  • Pour the dressing over the salad and gently toss to combine.
