  • 1 lb of boneless, skinless chicken breasts
  • 1 cup of shredded mozzarella cheese, plus more for sprinkling
  • 1 packet (about 1 oz) of ranch seasoning mix
  • 1 cup of breadcrumbs (Panko recommended)
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • Cooking spray or additional olive oil for greasing

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, chop up your chicken breasts into small chunks.
  • Add the shredded mozzarella cheese and half the ranch seasoning to the chicken, and mix well until everything is evenly distributed.
  • Grab a tablespoon of the chicken mixture and roll it into a ball, placing each chicken bomb on a greased baking sheet. If the mixture is too loose, refrigerate for 15 minutes.
  • In another bowl, mix the breadcrumbs, garlic powder, salt, and pepper. Roll each ball in the breadcrumb mixture until well coated.
  • Drizzle or lightly spray with olive oil and place back on the baking sheet.
  • Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the coating is golden.
  • Allow to cool slightly before serving, optionally sprinkling more mozzarella cheese on top.
