1 lb of boneless, skinless chicken breasts
1 cup of shredded mozzarella cheese, plus more for sprinkling
1 packet (about 1 oz) of ranch seasoning mix
1 cup of breadcrumbs (Panko recommended)
2 tablespoons of olive oil
1 teaspoon of garlic powder
Salt and pepper to taste
Cooking spray or additional olive oil for greasing
Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, chop up your chicken breasts into small chunks.
Add the shredded mozzarella cheese and half the ranch seasoning to the chicken, and mix well until everything is evenly distributed.
Grab a tablespoon of the chicken mixture and roll it into a ball, placing each chicken bomb on a greased baking sheet. If the mixture is too loose, refrigerate for 15 minutes.
In another bowl, mix the breadcrumbs, garlic powder, salt, and pepper. Roll each ball in the breadcrumb mixture until well coated.
Drizzle or lightly spray with olive oil and place back on the baking sheet.
Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the coating is golden.
Allow to cool slightly before serving, optionally sprinkling more mozzarella cheese on top.
