  • 2 cups diced potatoes (peeled or unpeeled)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp smoked paprika

  • Salt and pepper, to taste

  • ½ cup shredded cheddar cheese (optional)

  • Fresh cilantro and lime wedges, for garnish


Instructions

  • In a large skillet over medium heat, cook ground beef until browned. Drain any excess fat.

  • Add diced potatoes and onion to the skillet. Cook for 10 minutes, stirring occasionally.

  • Stir in garlic, chili powder, cumin, paprika, salt, and pepper. Cover and cook for 10–12 more minutes, until potatoes are fork-tender.

  • Sprinkle with shredded cheese (if using) and cover briefly until melted.

  • Garnish with chopped cilantro and a squeeze of lime. Serve hot!

Notes

  • Add corn, bell peppers, or black beans for extra texture and color.

  • Prefer it spicy? Toss in jalapeños or a dash of hot sauce.
