Ingredients

1 lb ground beef

2 cups diced potatoes (peeled or unpeeled)

1 small onion, diced

2 cloves garlic, minced

1 tsp chili powder

½ tsp cumin

½ tsp smoked paprika

Salt and pepper, to taste

½ cup shredded cheddar cheese (optional)

Fresh cilantro and lime wedges, for garnish
Instructions

In a large skillet over medium heat, cook ground beef until browned. Drain any excess fat.

Add diced potatoes and onion to the skillet. Cook for 10 minutes, stirring occasionally.

Stir in garlic, chili powder, cumin, paprika, salt, and pepper. Cover and cook for 10–12 more minutes, until potatoes are fork-tender.

Sprinkle with shredded cheese (if using) and cover briefly until melted.

Garnish with chopped cilantro and a squeeze of lime. Serve hot!
