Instructions

- Add corn, chili powder, smoked paprika, cayenne pepper, kosher salt, and black pepper. Stir and cook for about 5-7 minutes until corn is slightly charred.
- In a mixing bowl, combine cream cheese, sour cream, olive oil mayo, and fresh lime juice. Mix until smooth and creamy.
- Add the corn mixture to the creamy bowl and fold in crumbled cotija cheese and chopped fresh cilantro.
