This Mexican Street Corn Pasta Salad combines the smoky, tangy flavors of elote with tender pasta for a creamy, delicious dish. Perfect for BBQs, potlucks, or a refreshing side dish!
Ingredients

- 8 oz pasta (rotini or penne)
- 2 cups corn (grilled or canned, drained)
- ½ cup mayonnaise
- ½ cup sour cream (or Greek yogurt)
- ½ tsp chili powder
- ½ tsp smoked paprika
- Juice of 1 lime
- ½ cup crumbled cotija cheese (or feta)
- ¼ cup fresh cilantro, chopped
- ½ small red onion, finely diced
- Salt & pepper, to taste
Instructions
- Cook the Pasta:
- Boil pasta according to package directions, drain, and rinse under cold water.
- Prepare the Dressing:
- In a bowl, mix mayonnaise, sour cream, lime juice, chili powder, paprika, salt, and pepper.
- Assemble the Salad:
- In a large bowl, combine pasta, corn, red onion, and dressing. Mix well.
- Fold in cotija cheese and cilantro.
- Chill & Serve:
- Let sit for 15 minutes before serving for flavors to blend.
Notes
- Add grilled chicken or shrimp for a heartier dish.
- Use Tajín seasoning for extra zest!
- For a spicier kick, mix in diced jalapeño.
