Ingredients

  • 8 oz pasta (rotini or penne)
  • 2 cups corn (grilled or canned, drained)
  • ½ cup mayonnaise
  • ½ cup sour cream (or Greek yogurt)
  • ½ tsp chili powder
  • ½ tsp smoked paprika
  • Juice of 1 lime
  • ½ cup crumbled cotija cheese (or feta)
  • ¼ cup fresh cilantro, chopped
  • ½ small red onion, finely diced
  • Salt & pepper, to taste

Instructions

  • Cook the Pasta:
    • Boil pasta according to package directions, drain, and rinse under cold water.
  • Prepare the Dressing:
    • In a bowl, mix mayonnaise, sour cream, lime juice, chili powder, paprika, salt, and pepper.
  • Assemble the Salad:
    • In a large bowl, combine pasta, corn, red onion, and dressing. Mix well.
    • Fold in cotija cheese and cilantro.
  • Chill & Serve:
    • Let sit for 15 minutes before serving for flavors to blend.
