2 tablespoons olive oil
1 onion, diced
2 cloves of fresh garlic, minced
2 carrots, diced
2 celery stalks, diced
1 zucchini, diced
1 bell pepper, diced
1 cup green beans, cut into 1-inch pieces
1 (14.5 oz) can diced tomatoes
6 cups vegetable or chicken broth
1 can (15 oz) cannellini or kidney beans, drained and rinsed
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1 cup small pasta (like ditalini or elbow macaroni)
Fresh basil, for garnish
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it's translucent and aromatic.
Add the minced garlic, diced carrots, and celery. Cook for another 5 minutes, stirring occasionally.
Toss in the diced zucchini, bell pepper, and green beans. Stir everything together and cook for another 3-4 minutes.
Add the tomatoes and broth. Stir well to combine.
Sprinkle in the oregano, basil, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer uncovered for about 20 minutes.
