  • 1 cup mushrooms, finely chopped
  • 2 tablespoons olive oil, plus more for cooking
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon thyme, dried or fresh
  • 1 package puff pastry, thawed
  • 1 egg, beaten
  • Salt and pepper, to taste

  • In a large skillet over medium-high heat, heat a tablespoon of olive oil. Season your beef cubes generously with salt and pepper before adding them to the skillet. Sear for about 2-3 minutes until they're browned. Remove the beef from the pan and let it cool slightly.
  • In the same skillet, add another tablespoon of olive oil. Toss in the finely chopped mushrooms, and let them sauté on medium heat for about 5-7 minutes until they release their moisture and become golden brown. Stir in the minced garlic and thyme, cooking for an additional minute. Season with a pinch of salt and pepper, then remove from heat.
  • In a mixing bowl, combine the cooled beef, sautéed mushrooms, and Dijon mustard. Mix well, ensuring everything is coated evenly.
  • Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out each sheet of puff pastry to about ¼ inch thick. Cut them into squares of about 4×4 inches.
  • Place a generous tablespoon of the beef and mushroom filling in the center of each pastry square. Fold the corners of the pastry over the filling to seal. Brush the tops with the beaten egg.
  • Place the bites on a lined baking tray, spacing them out. Bake for 15-20 minutes or until the pastry is golden and puffed.
