Ingredients
1 cup graham cracker crumbs
3 tablespoons unsalted butter melted
2 tablespoons granulated sugar
1 can (14 ounces) sweetened condensed milk
½ cup key lime juice (fresh or bottled)
1 teaspoon lime zest
4 ounces cream cheese softened
1 cup whipped topping plus more for garnish
Instructions
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix well until the crumbs are evenly coated.
- Press the crumb mixture into the bottom of mini pie tins or cupcake liners to form the crust.
- In a large bowl, beat together the sweetened condensed milk, key lime juice, lime zest, and softened cream cheese until smooth and well combined.
- Gently fold in the whipped topping until fully incorporated.
- Spoon the lime filling into the prepared crusts, smoothing the tops with a spatula.
- Refrigerate the mini pies for at least 30 minutes to set before serving.
