Ingredients
1 cup (258 g) peanut butter
creamy or crunchy
1 cup (200 g) granulated sugar
1 large egg
room temperature
2 packages (8 ounces each) cream cheese
softened
⅓ cup (67 g) granulated sugar
¾ cup (193.5 g) creamy peanut butter
3 tablespoons sour cream
½ teaspoon vanilla extract
¾ cup (178.5 g) heavy whipping cream
cold
½ cup (62.5 g) confectioners’ sugar
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, combine peanut butter, granulated sugar, and egg. Mix until smooth and well incorporated.
- Distribute the peanut butter mixture evenly into the lined muffin tin and press down firmly to create the crust.
- In another mixing bowl, beat together cream cheese and ⅓ cup granulated sugar until smooth.
- Add in ¾ cup creamy peanut butter, sour cream, and vanilla extract. Mix well until creamy and combined.
- In a separate bowl, whip the cold heavy cream until soft peaks form, then gradually add in confectioners’ sugar and continue whipping until stiff peaks form.
- Gently fold the whipped cream into the peanut butter and cream cheese mixture until no streaks remain.
- Spoon the filling over the crust in the muffin tin, smoothing the tops if necessary.
- Bake for 25-30 minutes or until the filling is set. Remove from the oven and let cool.
- Refrigerate for at least 2 hours before serving. Enjoy your mini cheesecakes!
