For the Crust:
- 24 Mint Oreo cookies (or regular Oreos)
- ¼ cup unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups heavy whipping cream
- 1 cup mint Oreo cookies, chopped
For the Topping:
- 6–8 Mint Oreo cookies, chopped
- 2 tbsp chocolate syrup or melted chocolate (optional, for drizzling)

Prepare the Crust:
- Crush the 24 Oreo cookies in a food processor until fine crumbs form.
- Stir in melted butter until combined.
- Press the mixture into the bottom of a greased 8×8-inch baking pan. Set aside to chill while making the filling.

Make the Cheesecake Filling:
- In a large bowl, beat together cream cheese and powdered sugar until smooth and creamy.
- Add the vanilla extract and mix well.
- In a separate bowl, whip heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Stir in the chopped mint Oreos until evenly distributed.

Assemble the Bars:
- Pour the cheesecake filling over the prepared crust and spread it into an even layer.
- Chill in the refrigerator for at least 4 hours or until set.

Add the Topping:
- Once the cheesecake is set, sprinkle the chopped mint Oreos over the top.
- Drizzle with chocolate syrup or melted chocolate if desired.

Notes
