  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 large eggs, beaten
  • 1 cup shiitake mushrooms, sliced
  • 1 cup napa cabbage, shredded
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 3 green onions, chopped
  • 810 Chinese pancakes or tortillas
  • 2 cloves garlic, minced
  • Salt and black pepper to taste

  • Instructions

  • In a bowl, combine the sliced chicken with soy sauce, hoisin sauce, and a pinch of salt. Let it marinate for about 15 minutes while you prep the other ingredients.
  • In a large skillet or wok, heat the sesame oil and vegetable oil over medium-high heat.
  • Pour the beaten eggs into the skillet and scramble them until just set. Remove the eggs from the pan and set aside.
  • In the same pan, add more oil if needed and toss in the garlic. Let it bloom for about 30 seconds, then add the mushrooms, carrots, and bell pepper. Cook for about 3-4 minutes until they soften.
  • Add the marinated chicken to the pan and stir-fry it for about 5-7 minutes until cooked through.
  • Stir in the napa cabbage and green onions, cooking for another 2-3 minutes until the cabbage wilts.
  • Fold the scrambled eggs back into the mixture, ensuring everything is well combined.
  • Warm up your pancakes or tortillas, then take a generous scoop of the moo shu mixture and wrap it up.
