2 tablespoons of olive oil
1 medium onion, diced
3 cloves of garlic, minced
4 chicken thighs, bone-in or skinless
2 cups of carrots, sliced
1 cup of bell peppers, diced
1 can (14 oz) of chickpeas, drained and rinsed
1 can (14 oz) of diced tomatoes
2 cups of chicken broth
3 tablespoons of ras el hanout
1 teaspoon of ground cumin
Salt and pepper to taste
Fresh cilantro or parsley for garnish
Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it's translucent and aromatic.
Stir in the minced garlic and let it cook for about 1 minute, just until it becomes fragrant.
Add the chicken thighs to the pot, searing them for about 4-5 minutes per side until they’re golden brown.
Once the chicken is nicely browned, add the carrots and bell peppers, stirring everything together.
Pour in the chickpeas, diced tomatoes, and chicken broth. Toss in the ras el hanout, cumin, salt, and pepper. Bring the whole mix to a gentle simmer.
Cover the pot and let it simmer on low heat for about 30-40 minutes, or until the chicken is tender and cooked through.
Once done, remove the chicken, shred it using two forks, and then stir it back into the stew.
Garnish with fresh cilantro or parsley, and serve.
