  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 4 chicken thighs, bone-in or skinless
  • 2 cups of carrots, sliced
  • 1 cup of bell peppers, diced
  • 1 can (14 oz) of chickpeas, drained and rinsed
  • 1 can (14 oz) of diced tomatoes
  • 2 cups of chicken broth
  • 3 tablespoons of ras el hanout
  • 1 teaspoon of ground cumin
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

  • Instructions

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it's translucent and aromatic.
  • Stir in the minced garlic and let it cook for about 1 minute, just until it becomes fragrant.
  • Add the chicken thighs to the pot, searing them for about 4-5 minutes per side until they’re golden brown.
  • Once the chicken is nicely browned, add the carrots and bell peppers, stirring everything together.
  • Pour in the chickpeas, diced tomatoes, and chicken broth. Toss in the ras el hanout, cumin, salt, and pepper. Bring the whole mix to a gentle simmer.
  • Cover the pot and let it simmer on low heat for about 30-40 minutes, or until the chicken is tender and cooked through.
  • Once done, remove the chicken, shred it using two forks, and then stir it back into the stew.
  • Garnish with fresh cilantro or parsley, and serve.
