Ingredients

  • 2 boneless chicken breasts

  • Salt & pepper, to taste

  • 1 tbsp olive oil

  • 1/2 cup chicken broth

  • 3/4 cup heavy cream

  • 1/2 tsp garlic powder

  • 1/4 tsp dried Italian seasoning

  • 1/3 cup grated Parmesan

  • 1/2 cup shredded mozzarella

  • 1/4 cup chopped fresh basil (or 1 tsp dried)


Instructions

  1. Sear chicken: Season chicken with salt and pepper. Sear in olive oil over medium heat until golden and cooked through (6–7 mins per side). Remove and set aside.

  2. Make sauce: In the same pan, add chicken broth, cream, garlic powder, Italian seasoning, and Parmesan. Simmer 3–4 minutes until thickened.

  3. Add cheese & basil: Stir in mozzarella and basil until melted and smooth.

  4. Return chicken: Place chicken back into the sauce and simmer for 2–3 minutes. Serve hot.

Notes

  • Pair with pasta, mashed potatoes, or steamed veggies.

  • For a lighter option, use half-and-half instead of cream.

  • Fresh basil adds the best flavor, but dried works too in a pinch.
