  • 2 tablespoons unsalted butter
  • 3/4 cup grated Parmesan cheese
  • Salt and pepper to taste

  • Instructions

  • Prepare the broth: In a saucepan, heat the broth over low heat until warm but not boiling.
  • Sauté the aromatics: Heat olive oil over medium heat, add onions, and cook until translucent. Then add garlic and cook for another minute.
  • Cook the mushrooms: Add chopped mushrooms to the skillet and sauté until tender and moisture has evaporated, about 5-7 minutes.
  • Add the rice: Stir in Arborio rice, coating it with oil and veggie mixture, and toast lightly for 1-2 minutes.
  • Add the wine: Pour in white wine and stir until it’s mostly absorbed.
  • Add broth gradually: Add a ladleful of warm broth to the rice, stir gently until almost all liquid is absorbed, and repeat until rice is creamy and al dente, about 18-20 minutes.
  • Finish with cheese and butter: Remove from heat and stir in butter and Parmesan cheese until melted and creamy.
  • Garnish and serve: Sprinkle fresh parsley before serving. Dish it out warm and enjoy!
