1 cup Arborio rice
4 cups low-sodium chicken or vegetable broth
1 cup mushrooms, chopped
1 small onion, finely chopped
2 cloves of garlic, minced
1/2 cup dry white wine
1 tablespoon olive oil
2 tablespoons unsalted butter
3/4 cup grated Parmesan cheese
Salt and pepper to taste

Instructions
Prepare the broth: In a saucepan, heat the broth over low heat until warm but not boiling.
Sauté the aromatics: Heat olive oil over medium heat, add onions, and cook until translucent. Then add garlic and cook for another minute.
Cook the mushrooms: Add chopped mushrooms to the skillet and sauté until tender and moisture has evaporated, about 5-7 minutes.

Add the wine: Pour in white wine and stir until it’s mostly absorbed.
Add broth gradually: Add a ladleful of warm broth to the rice, stir gently until almost all liquid is absorbed, and repeat until rice is creamy and al dente, about 18-20 minutes.
Finish with cheese and butter: Remove from heat and stir in butter and Parmesan cheese until melted and creamy.
