Ingredients
Scale
1 lb ground beef or lamb
1 medium onion, diced
2 cloves garlic, minced
2 cups frozen mixed vegetables
1 tablespoon tomato paste
1 cup beef broth
1 tablespoon Worcestershire sauce
2 teaspoons dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
4 large potatoes, peeled and cubed
4 tablespoons butter
1/2 cup milk
1 cup shredded cheese (optional)
Instructions
Prepare the Potatoes: Place your peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Don’t forget to drain them well!
Sauté the Aromatics: In a large skillet, heat a splash of olive oil over medium heat. Add the diced onion and cook until it becomes translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute, until fragrant.
Add the Meat: Toss in the ground beef or lamb, breaking it up with a spoon. Cook until browned, about 6-8 minutes. Drain any excess fat from the pan.
Mix in the Good Stuff: Stir in the tomato paste, mixed vegetables, beef broth, Worcestershire sauce, thyme, salt, and pepper. Bring to a simmer and cook for about 10 minutes, allowing the flavors to meld beautifully.
Mash Those Potatoes: While your filling is bubbling away, return to those potatoes. Add butter and milk to the drained potatoes and mash until creamy and smooth. Feel free to add more milk or butter if you want it extra rich!
Assemble the Shepherd’s Pie: In a greased baking dish (9×13 works perfectly), spread the meat mixture in an even layer. Top it with the creamy mashed potatoes, spreading them out to cover the filling completely. If you’re feeling fancy, use a fork to create some texture — those crispy edges are the best!
Add Cheese (Optional): If using cheese, sprinkle it generously over the top. It adds an irresistible cheesy crust as it bakes!
Bake: Preheat your oven to 400°F (200°C) and bake for about 25-30 minutes, or until the top is golden and bubbly. You can finish it under the broiler for a minute or two for an extra crispy top — just keep an eye on it!
Cool and Serve: Let it rest for about 10 minutes before serving. This helps it set up nicely and makes it easier to serve!
