Description

These Birria Tacos are rich, juicy, and packed with deep, smoky flavors. Slow-cooked beef in a spiced consommé, crisped to perfection in a cheesy tortilla—then dipped in that flavorful broth for the ultimate bite! Perfect for taco lovers and special occasions!


Ingredients

  • 2 lbs beef chuck roast (or short ribs)
  • 4 dried guajillo chiles, seeded
  • 2 dried ancho chiles, seeded
  • 1 chipotle pepper in adobo
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup water
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp cinnamon
  • 2 tbsp apple cider vinegar
  • Salt & pepper to taste
  • Corn tortillas
  • 1 cup shredded Oaxaca or mozzarella cheese
  • Fresh cilantro & onions for garnish

Instructions

1️⃣ Prepare the Sauce – Toast dried chiles in a pan, then blend with chipotle, broth, onion, garlic, vinegar, and spices until smooth.
2️⃣ Slow Cook the Beef – Pour the sauce over the beef in a slow cooker or Dutch oven. Cook on low for 6-8 hours until tender. Shred the beef.
3️⃣ Crisp the Tacos – Dip tortillas in the broth, then fill with beef and cheese. Pan-fry until crispy.
4️⃣ Serve & Dip – Garnish with fresh cilantro and onions. Serve with a bowl of the rich consommé for dipping!

Notes

For extra richness, add a cinnamon stick while cooking.
Want more spice? Add more chipotle in adobo or a dash of hot sauce!
