Nectarine Cobbler combines juicy nectarines with a sweet biscuit topping, baked to golden perfection for a warm, comforting summer dessert.
Ingredients
• 5 cups fresh nectarines, sliced
• 1/4 cup granulated sugar
• 1 tablespoon lemon juice
• 1 teaspoon vanilla extract
• 1 cup all-purpose flour
• 1/2 cup granulated sugar
• 1 1/2 teaspoons baking powder
• 1/4 teaspoon salt
• 6 tablespoons unsalted butter, chilled and cut into small pieces
• 1/3 cup milk
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large bowl, toss nectarines with 1/4 cup sugar, lemon juice, and vanilla extract. Set aside.
3. In another bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
4. Cut in chilled butter until mixture resembles coarse crumbs.
5. Add milk and stir just until combined to form a dough.
6. Pour nectarines into a greased 8×8-inch baking dish.
7. Drop spoonfuls of dough evenly over the fruit.
8. Bake for 35-40 minutes, until topping is golden and nectarines are bubbly.
9. Allow to cool slightly before serving.
Notes
Serve warm with vanilla ice cream or whipped cream.
Use ripe nectarines for the best flavor and sweetness.
For a gluten-free option, substitute all-purpose flour with gluten-free baking flour.
