1 ½ cups of all-purpose flour
½ cup of rolled oats (old-fashioned for best texture)
¾ cup of brown sugar
½ teaspoon of salt
½ teaspoon of baking powder
¾ cup of cold butter, diced into small pieces (unsalted is best)
1 teaspoon of vanilla extract
3 cups of fresh nectarines, diced (about 4–5 medium-sized nectarines)
½ cup of granulated sugar (adjust based on sweetness of nectarines)
2 tablespoons of cornstarch (to help thicken the filling)
1 tablespoon of lemon juice (to brighten the flavors)
Preheat your oven to 350°F (175°C).
Grease an 8×8 inch baking dish or line it with parchment paper.
In a large bowl, combine the flour, oats, brown sugar, salt, and baking powder. Stir until well combined.
Using a pastry cutter or your fingers, cut the butter into the dry mixture until it resembles coarse crumbs.
Reserve about ¾ cup of the crumble mixture for the topping. Press the remaining crumble mixture firmly into the bottom of your prepared baking dish.
In a separate bowl, combine the diced nectarines, granulated sugar, cornstarch, and lemon juice. Stir gently to coat the nectarines.
Evenly pour the nectarine filling over the pressed crust in the baking dish.
Sprinkle the reserved crumble mixture generously over the nectarine filling.
Bake in the preheated oven for 35-40 minutes until the topping is golden brown and the filling is bubbly.
Allow to cool in the pan for at least 20 minutes before serving.
