  • 1 teaspoon of vanilla extract
  • 3 cups of fresh nectarines, diced (about 45 medium-sized nectarines)
  • ½ cup of granulated sugar (adjust based on sweetness of nectarines)
  • 2 tablespoons of cornstarch (to help thicken the filling)
  • 1 tablespoon of lemon juice (to brighten the flavors)

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • Grease an 8×8 inch baking dish or line it with parchment paper.
  • In a large bowl, combine the flour, oats, brown sugar, salt, and baking powder. Stir until well combined.
  • Using a pastry cutter or your fingers, cut the butter into the dry mixture until it resembles coarse crumbs.
  • Reserve about ¾ cup of the crumble mixture for the topping. Press the remaining crumble mixture firmly into the bottom of your prepared baking dish.
  • In a separate bowl, combine the diced nectarines, granulated sugar, cornstarch, and lemon juice. Stir gently to coat the nectarines.
  • Evenly pour the nectarine filling over the pressed crust in the baking dish.
  • Sprinkle the reserved crumble mixture generously over the nectarine filling.
  • Bake in the preheated oven for 35-40 minutes until the topping is golden brown and the filling is bubbly.
  • Allow to cool in the pan for at least 20 minutes before serving.
