  • 12 fresh peppers (Scotch bonnet or habanero)
  • 1 can (14 oz) of crushed tomatoes
  • 2 tablespoons of tomato paste
  • 1 teaspoon of thyme (fresh or dried)
  • 1 teaspoon of curry powder
  • Salt and pepper, to taste
  • 2 cups chicken broth or water
  • Optional: 1-2 carrots, diced

  • Instructions

  • Rinse and pat-dry the chicken pieces. Season them with salt and pepper. Marinate for 20 minutes if possible.
  • In a large pot, heat the vegetable oil over medium heat until shimmering.
  • Add the chopped onions and sauté until translucent, then add minced garlic and cook for another minute.
  • Stir in chopped peppers, thyme, and curry powder before adding crushed tomatoes and tomato paste. Simmer for 10-15 minutes.
  • Add the seasoned chicken and pour in enough chicken broth or water to cover the chicken.
  • Bring the stew to a gentle boil, reduce heat, cover, and simmer for 30-40 minutes.
  • Taste and adjust seasoning as needed, adding carrots 15 minutes before done.
