4 pieces of chicken (thighs or drumsticks)
1/4 cup vegetable oil (or palm oil for a traditional flavor)
1 large onion, chopped
4 cloves of garlic, minced
1–2 fresh peppers (Scotch bonnet or habanero)
1 can (14 oz) of crushed tomatoes
2 tablespoons of tomato paste
1 teaspoon of thyme (fresh or dried)
1 teaspoon of curry powder
Salt and pepper, to taste
2 cups chicken broth or water
Optional: 1-2 carrots, diced
Rinse and pat-dry the chicken pieces. Season them with salt and pepper. Marinate for 20 minutes if possible.
In a large pot, heat the vegetable oil over medium heat until shimmering.
Add the chopped onions and sauté until translucent, then add minced garlic and cook for another minute.
Stir in chopped peppers, thyme, and curry powder before adding crushed tomatoes and tomato paste. Simmer for 10-15 minutes.
Add the seasoned chicken and pour in enough chicken broth or water to cover the chicken.
Bring the stew to a gentle boil, reduce heat, cover, and simmer for 30-40 minutes.
Taste and adjust seasoning as needed, adding carrots 15 minutes before done.
