2 cups of sweetened shredded coconut, plus extra for rolling
1 cup of chopped pecans
1 cup of brown sugar, packed tight
½ cup of unsalted butter or coconut oil
½ cup of sweetened condensed milk
1 teaspoon of vanilla extract
Pinch of salt
Instructions
Toast shredded coconut and chopped pecans separately in a skillet over medium heat for 2-5 minutes until golden brown.
In a medium saucepan, combine brown sugar, butter, and sweetened condensed milk over medium heat, stirring until it comes to a gentle boil and boils for 2-3 minutes.
Remove from heat and stir in vanilla extract, toasted coconut (saving some for topping), chopped pecans, and a pinch of salt until well combined.
Allow the mixture to cool for a few minutes, scoop a tablespoon of mixture, roll into a ball, then roll in extra shredded coconut. Place on parchment-lined baking sheet.
Chill in refrigerator for at least 30 minutes until firm.
