For the crust:

  • 24 Oreo cookies (crushed)
  • 1/4 cup melted butter

For the filling:

  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy cream
  • 10 Oreo cookies, coarsely chopped

Instructions

  1. Prepare the crust:
    • In a food processor, crush the Oreo cookies until fine crumbs form. Mix the crumbs with melted butter until fully combined.
    • Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Refrigerate while preparing the filling.
  2. Make the filling:
    • In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
    • In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  3. Assemble the cheesecake:
    • Fold in the chopped Oreos, then spread the filling evenly over the prepared crust.
  4. Chill and serve:
    • Refrigerate the cheesecake for at least 4 hours, or until set. Garnish with additional chopped Oreos, if desired.
    • Slice and serve chilled. Enjoy!
