For the crust:
- 24 Oreo cookies (crushed)
- 1/4 cup melted butter
For the filling:
- 16 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy cream
- 10 Oreo cookies, coarsely chopped
Instructions
- Prepare the crust:
- In a food processor, crush the Oreo cookies until fine crumbs form. Mix the crumbs with melted butter until fully combined.
- Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Refrigerate while preparing the filling.
- Make the filling:
- In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Assemble the cheesecake:
- Fold in the chopped Oreos, then spread the filling evenly over the prepared crust.
- Chill and serve:
- Refrigerate the cheesecake for at least 4 hours, or until set. Garnish with additional chopped Oreos, if desired.
