Ingredients
2 cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter melted
24 oz cream cheese softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
½ teaspoon almond extract optional
½ cup sour cream
½ cup heavy cream
1 ½ cups fresh peaches sliced
1 cup fresh strawberries halved
½ cup fresh raspberries
½ cup fresh blueberries
¼ cup apricot preserves or peach jam
1 tablespoon lemon juice
Instructions
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and press into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
- Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract, optional almond extract, sour cream, and heavy cream until fully combined.
- Pour the cheesecake filling over the prepared crust and smooth the top with a spatula.
- Refrigerate for at least 4 hours or until set, preferably overnight.
- Once set, top the cheesecake with sliced peaches, halved strawberries, raspberries, and blueberries.
- In a small saucepan, heat the apricot preserves with lemon juice until melted and smooth. Brush this mixture over the fruits to give a glossy finish.
