4 boneless, skinless chicken breasts

1 tbsp olive oil

3 cloves garlic, minced

1 can (13.5 oz) full-fat coconut milk

Juice and zest of 2 limes

1 tbsp honey

½ tsp chili flakes (optional)

¼ cup chopped fresh cilantro (for garnish)
Instructions

Season & sear the chicken: Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat and sear chicken on both sides until golden brown (about 3–4 minutes per side). Remove and set aside.

Make the sauce: In the same pan, add garlic and sauté for 30 seconds. Pour in coconut milk, lime juice, lime zest, honey, and chili flakes. Stir to combine.

Simmer: Return chicken to the pan. Simmer in the sauce over medium heat for 10–15 minutes, or until the chicken is cooked through and the sauce thickens slightly.
