Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt & pepper, to taste

  • 1 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 can (13.5 oz) full-fat coconut milk

  • Juice and zest of 2 limes

  • 1 tbsp honey

  • ½ tsp chili flakes (optional)

  • ¼ cup chopped fresh cilantro (for garnish)


Instructions

  1. Season & sear the chicken: Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat and sear chicken on both sides until golden brown (about 3–4 minutes per side). Remove and set aside.

  2. Make the sauce: In the same pan, add garlic and sauté for 30 seconds. Pour in coconut milk, lime juice, lime zest, honey, and chili flakes. Stir to combine.

  3. Simmer: Return chicken to the pan. Simmer in the sauce over medium heat for 10–15 minutes, or until the chicken is cooked through and the sauce thickens slightly.

  4. Garnish & serve: Sprinkle with fresh cilantro and serve with rice, quinoa, or roasted vegetables.

Notes

  • Use chicken thighs instead of breasts for extra juiciness.

  • Add bell peppers or spinach for extra color and nutrition.

  • For a creamier sauce, stir in a spoonful of Greek yogurt at the end (off the heat).
