Description
Juicy chicken breasts simmered in a creamy Tuscan sauce with sun-dried tomatoes, garlic, spinach, and Parmesan cheese — all cooked in one pan for quick cleanup.
Ingredients
4 boneless skinless chicken breasts
2 tbsp olive oil
3 cloves garlic, minced
1 cup sun-dried tomatoes (packed in oil), chopped
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tsp dried Italian herbs
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Heat olive oil in a large skillet over medium-high heat.
2. Season chicken breasts with salt, pepper, and Italian herbs.
3. Cook chicken until golden and cooked through, about 6-7 minutes per side. Remove from pan and set aside.
4. Add garlic and sun-dried tomatoes to the skillet; sauté for 2 minutes.
5. Reduce heat to medium-low, stir in heavy cream and Parmesan cheese.
6. Add spinach and cook until wilted.
7. Return chicken to the pan and spoon sauce over each piece.
8. Simmer for 3-4 minutes until sauce thickens.
9. Garnish with fresh parsley and serve warm.
Notes
Serve over pasta, rice, or mashed potatoes.
Use fresh tomatoes if sun-dried are unavailable.
Add crushed red pepper flakes for extra heat.
