Ingredients

1/2 lb Italian sausage (crumbled)

1 cup orzo pasta

1 tbsp olive oil

1/2 onion, chopped

2 garlic cloves, minced

1 1/2 cups chicken broth

1/2 cup canned diced tomatoes

1/4 tsp Italian seasoning

1/4 cup grated Parmesan cheese

Salt & pepper, to taste

Optional: fresh basil or parsley for garnish
Instructions

Cook sausage: In a large skillet, heat olive oil and cook sausage until browned. Remove excess grease.

Sauté aromatics: Add onion and garlic to the skillet. Cook 2–3 minutes until softened.

Add orzo & liquid: Stir in orzo, broth, tomatoes, and Italian seasoning. Bring to a simmer.

Simmer covered: Cook uncovered over medium-low heat for 10–12 minutes, stirring occasionally, until orzo is tender.

Finish: Stir in Parmesan, season with salt and pepper, and garnish with herbs. Serve hot.
