Ingredients

  • 1/2 lb Italian sausage (crumbled)

  • 1 cup orzo pasta

  • 1 tbsp olive oil

  • 1/2 onion, chopped

  • 2 garlic cloves, minced

  • 1 1/2 cups chicken broth

  • 1/2 cup canned diced tomatoes

  • 1/4 tsp Italian seasoning

  • 1/4 cup grated Parmesan cheese

  • Salt & pepper, to taste

  • Optional: fresh basil or parsley for garnish


Instructions

  1. Cook sausage: In a large skillet, heat olive oil and cook sausage until browned. Remove excess grease.

  2. Sauté aromatics: Add onion and garlic to the skillet. Cook 2–3 minutes until softened.

  3. Add orzo & liquid: Stir in orzo, broth, tomatoes, and Italian seasoning. Bring to a simmer.

  4. Simmer covered: Cook uncovered over medium-low heat for 10–12 minutes, stirring occasionally, until orzo is tender.

  5. Finish: Stir in Parmesan, season with salt and pepper, and garnish with herbs. Serve hot.

Notes

  • Add spinach or kale at the end for a veggie boost.

  • Swap sausage for ground chicken or plant-based sausage if desired.

  • For a creamier version, stir in a splash of cream before serving.
