1 tablespoon of olive oil
1 onion, diced
3 cloves of fresh garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 teaspoon of dried thyme
1 teaspoon of dried parsley
Salt and pepper to taste
1 pound of boneless, skinless chicken breast, cut into bite-sized pieces
6 cups of chicken broth
1 cup of frozen peas
2 cups of all-purpose flour for the dumplings
1 tablespoon of baking powder for the dumplings
1/2 teaspoon of salt for the dumplings
1 cup of whole milk for the dumplings
1/4 cup of melted butter for the dumplings
1 tablespoon of fresh parsley, chopped for garnish
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté until the veggies are soft and the onions are translucent, about 5-7 minutes.
Stir in the dried thyme, parsley, salt, and pepper, cooking for another minute.
Add the chicken breast pieces to the pot, stirring to coat them with the fragrant veggies. Cook until the chicken is no longer pink, about 3-4 minutes.
Pour in the chicken broth and bring to a gentle boil. Lower the heat and let it simmer for about 15 minutes.
In a large mixing bowl, whisk together the flour, baking powder, and salt for the dumplings.
In another bowl, combine the milk and melted butter, then pour the wet ingredients into the dry ingredients, stirring gently until just combined.
After 15 minutes, add the frozen peas and drop spoonfuls of the dumpling batter on top.
Cover the pot and let the dumplings steam on top of the soup for 15 minutes.
Gently stir the soup, taste for seasoning, and serve hot, garnished with fresh parsley.
