  • Salt and pepper to taste
  • 1 pound of boneless, skinless chicken breast, cut into bite-sized pieces
  • 6 cups of chicken broth
  • 1 cup of frozen peas
  • 2 cups of all-purpose flour for the dumplings
  • 1 tablespoon of baking powder for the dumplings
  • 1/2 teaspoon of salt for the dumplings
  • 1 cup of whole milk for the dumplings
  • 1/4 cup of melted butter for the dumplings
  • 1 tablespoon of fresh parsley, chopped for garnish

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté until the veggies are soft and the onions are translucent, about 5-7 minutes.
  • Stir in the dried thyme, parsley, salt, and pepper, cooking for another minute.
  • Add the chicken breast pieces to the pot, stirring to coat them with the fragrant veggies. Cook until the chicken is no longer pink, about 3-4 minutes.
  • Pour in the chicken broth and bring to a gentle boil. Lower the heat and let it simmer for about 15 minutes.
  • In a large mixing bowl, whisk together the flour, baking powder, and salt for the dumplings.
  • In another bowl, combine the milk and melted butter, then pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  • After 15 minutes, add the frozen peas and drop spoonfuls of the dumpling batter on top.
  • Cover the pot and let the dumplings steam on top of the soup for 15 minutes.
  • Gently stir the soup, taste for seasoning, and serve hot, garnished with fresh parsley.
