1 pound boneless, skinless chicken thighs
2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
2 medium carrots, sliced
1 medium zucchini, sliced
1 bell pepper, chopped
1 cup cherry tomatoes, halved
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper, to taste
2 cups chicken broth
Fresh parsley, for garnish
Cut the chicken thighs into bite-sized pieces.
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and sauté for 3-4 minutes. Then add the minced garlic and sauté for another minute.
Add the cut chicken to the pot, season with salt and pepper, and sear until golden brown for about 5-7 minutes.
Add the sliced carrots, zucchini, chopped bell pepper, and halved cherry tomatoes to the pot. Stir well.
Sprinkle the dried oregano and thyme over the mixture, then stir again.
Pour in the chicken broth and bring to a gentle simmer.
Reduce heat to low, cover, and let it simmer for 20-25 minutes.
Taste and adjust seasoning if necessary, then garnish with fresh parsley before serving.
