  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 1 medium zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 cups chicken broth
  • Fresh parsley, for garnish

  • Instructions

  • Cut the chicken thighs into bite-sized pieces.
  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté for 3-4 minutes. Then add the minced garlic and sauté for another minute.
  • Add the cut chicken to the pot, season with salt and pepper, and sear until golden brown for about 5-7 minutes.
  • Add the sliced carrots, zucchini, chopped bell pepper, and halved cherry tomatoes to the pot. Stir well.
  • Sprinkle the dried oregano and thyme over the mixture, then stir again.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Reduce heat to low, cover, and let it simmer for 20-25 minutes.
  • Taste and adjust seasoning if necessary, then garnish with fresh parsley before serving.
