  • 1 lb smoked sausage or andouille sausage, sliced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 ½ cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne or rotini pasta (uncooked)
  • 1 tbsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup shredded Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  • Cook the Sausage:

    • In a large pot or skillet, heat olive oil over medium heat.
    • Add sliced sausage and cook until browned, about 5-7 minutes. Remove and set aside.
  • Sauté the Vegetables:

    • In the same pot, add onion, bell pepper, and garlic. Cook for 2-3 minutes until softened.
  • Make the Sauce:

    • Add diced tomatoes (with juices), chicken broth, heavy cream, Cajun seasoning, smoked paprika, salt, and pepper. Stir to combine.
  • Add the Pasta:

    • Stir in the uncooked pasta, ensuring it’s submerged in the sauce. Bring to a simmer, then cover and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
  • Finish the Dish:

    • Once the pasta is cooked, stir in the cooked sausage and Parmesan cheese. Cook for an additional 2-3 minutes until the cheese melts and everything is well combined.
  • Serve & Garnish:

    • Garnish with fresh parsley and serve immediately!
