- 1 lb smoked sausage or andouille sausage, sliced
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 ½ cups chicken broth
- 1 cup heavy cream
- 8 oz penne or rotini pasta (uncooked)
- 1 tbsp Cajun seasoning
- ½ tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 cup shredded Parmesan cheese
- Fresh parsley for garnish (optional)

Cook the Sausage:
- In a large pot or skillet, heat olive oil over medium heat.
- Add sliced sausage and cook until browned, about 5-7 minutes. Remove and set aside.

- Stir in the uncooked pasta, ensuring it’s submerged in the sauce. Bring to a simmer, then cover and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.

- Once the pasta is cooked, stir in the cooked sausage and Parmesan cheese. Cook for an additional 2-3 minutes until the cheese melts and everything is well combined.
