Ingredients
1 lb smoked sausage, sliced
2 tbsp olive oil
1 bell pepper, diced
1 small onion, diced
3 cloves garlic, minced
2 tbsp Cajun seasoning
2 cups chicken broth
1 cup heavy cream
8 oz penne pasta
Salt and pepper to taste
2 tbsp chopped parsley
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add sausage slices and cook until browned.
3. Add bell pepper, onion, and garlic; sauté until softened.
4. Stir in Cajun seasoning.
5. Pour in chicken broth and heavy cream; bring to a simmer.
6. Add penne pasta; cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender.
7. Season with salt and pepper.
8. Sprinkle chopped parsley before serving.
Notes
Use gluten-free pasta to make it gluten-free.
Add extra vegetables like spinach or mushrooms for variety.
Serve with grated Parmesan cheese.
