Inspired by the rich flavors of French onion soup, this creamy pasta brings caramelized onions, garlic, and melted cheese together in one comforting, easy-to-make pot.


Ingredients

  • 2 tbsp butter

  • 2 large yellow onions, thinly sliced

  • 2 garlic cloves, minced

  • 1 tsp thyme (fresh or dried)

  • 1 tbsp balsamic vinegar

  • 8 oz pasta (fettuccine or linguine)

  • 3 cups beef or vegetable broth

  • 1/2 cup grated Gruyère or Swiss cheese

  • Salt & pepper, to taste

  • Optional: chopped parsley, extra cheese for topping


Instructions

  1. Caramelize onions: In a large pot, melt butter over medium heat. Add onions, salt, and thyme. Cook until golden and caramelized, about 15–20 minutes.

  2. Deglaze: Add garlic and balsamic vinegar. Stir for 1–2 minutes.

  3. Cook pasta: Pour in broth and bring to a simmer. Add pasta and cook uncovered, stirring often, until pasta is tender and liquid is mostly absorbed (about 10 minutes).

  4. Add cheese: Stir in grated cheese until creamy. Season with salt and pepper. Serve warm.

Notes

  • Stir frequently to prevent pasta from sticking.

  • Use veggie broth for a vegetarian version.
