Description
Inspired by the rich flavors of French onion soup, this creamy pasta brings caramelized onions, garlic, and melted cheese together in one comforting, easy-to-make pot.
Ingredients
-
2 tbsp butter
-
2 large yellow onions, thinly sliced
-
2 garlic cloves, minced
-
1 tsp thyme (fresh or dried)
-
1 tbsp balsamic vinegar
-
8 oz pasta (fettuccine or linguine)
-
3 cups beef or vegetable broth
-
1/2 cup grated Gruyère or Swiss cheese
-
Salt & pepper, to taste
-
Optional: chopped parsley, extra cheese for topping
Instructions
-
Caramelize onions: In a large pot, melt butter over medium heat. Add onions, salt, and thyme. Cook until golden and caramelized, about 15–20 minutes.
-
Deglaze: Add garlic and balsamic vinegar. Stir for 1–2 minutes.
-
Cook pasta: Pour in broth and bring to a simmer. Add pasta and cook uncovered, stirring often, until pasta is tender and liquid is mostly absorbed (about 10 minutes).
-
Add cheese: Stir in grated cheese until creamy. Season with salt and pepper. Serve warm.
Notes
-
Stir frequently to prevent pasta from sticking.
-
Use veggie broth for a vegetarian version.
-
Add sautéed mushrooms for extra depth.
