One Pot Lasagna Soup is a hearty and comforting dish that combines all the flavors of traditional lasagna in a warm and delicious soup. Perfect for busy weeknights, this simple recipe is packed with ground beef, herbs, and plenty of cheesy goodness.
Ingredients
1 lb ground beef (90/10 for less grease)
1 small yellow onion
chopped
3 cloves garlic
minced
1 tsp dried basil
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp crushed red pepper flakes (optional kick!)
2 tbsp tomato paste
1 (28 oz) can crushed tomatoes
1 (14 oz) can tomato sauce
4 cups chicken broth
2 cups water
10 oz broken lasagna noodles
1 cup frozen spinach
chopped
1/2 cup heavy cream
Ricotta cheese
for topping
Shredded mozzarella
Grated parmesan (optional but highly encouraged)
Instructions
- In a large pot, brown the ground beef over medium heat until cooked through. Drain excess fat.
- Add chopped onion and minced garlic, sauté until the onion is translucent.
- Stir in dried basil, dried oregano, salt, black pepper, and crushed red pepper flakes. Cook for 1 minute.
- Add tomato paste, crushed tomatoes, tomato sauce, chicken broth, and water. Stir to combine.
- Bring the mixture to a boil, then add broken lasagna noodles and chopped spinach. Reduce heat and let simmer for about 15 minutes, stirring occasionally.
- Once the noodles are tender, stir in the heavy cream.
- Serve hot, topped with ricotta cheese, shredded mozzarella, and grated parmesan if desired.
Notes
For a vegetarian version, substitute ground beef with lentils or mushrooms. Feel free to customize with your favorite vegetables.
