  • 4 boneless, skinless chicken thighs
  • 1 cup basmati or jasmine rice, rinsed
  • 2 cups chicken broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley or basil, for garnish

  • Instructions

  • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the pot. Sear each side until golden brown, about 5 minutes per side.
  • Once the chicken is browned, remove it from the pot and set it aside. In the same pot, add the chopped onion and sauté until translucent, about 3-4 minutes. Then, toss in the minced garlic and stir for another 30 seconds.
  • Add the diced red bell pepper, zucchini, and halved cherry tomatoes to the onion-garlic mixture. Let everything sauté together for a few minutes.
  • Sprinkle in the oregano, smoked paprika, and cumin, stirring to combine.
  • Pour the rinsed rice into the pot, mixing it well with the vegetables and spices.
  • Pour the chicken broth into the pot, scraping the bottom. Nestle the chicken thighs back into the mix. Bring to a gentle boil, then cover and reduce to a simmer.
  • Allow it to simmer for about 20 minutes. Keep an eye on it to ensure the rice doesn’t dry out.
  • After 20 minutes, check that the rice is fluffy and the chicken is cooked through. If it needs more time, cover and let it cook for another 5 minutes.
  • Fluff the rice gently with a fork and sprinkle with fresh parsley or basil before serving.
