4 boneless, skinless chicken thighs
1 cup basmati or jasmine rice, rinsed
2 cups chicken broth
1 medium onion, finely chopped
3 cloves garlic, minced
1 red bell pepper, diced
1 zucchini, sliced
1 cup cherry tomatoes, halved
1 teaspoon dried oregano
1 teaspoon smoked paprika
½ teaspoon cumin
Salt and pepper, to taste
2 tablespoons olive oil
Fresh parsley or basil, for garnish
Instructions
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the pot. Sear each side until golden brown, about 5 minutes per side.
Once the chicken is browned, remove it from the pot and set it aside. In the same pot, add the chopped onion and sauté until translucent, about 3-4 minutes. Then, toss in the minced garlic and stir for another 30 seconds.
Add the diced red bell pepper, zucchini, and halved cherry tomatoes to the onion-garlic mixture. Let everything sauté together for a few minutes.
Sprinkle in the oregano, smoked paprika, and cumin, stirring to combine.
Pour the rinsed rice into the pot, mixing it well with the vegetables and spices.
Pour the chicken broth into the pot, scraping the bottom. Nestle the chicken thighs back into the mix. Bring to a gentle boil, then cover and reduce to a simmer.
Allow it to simmer for about 20 minutes. Keep an eye on it to ensure the rice doesn’t dry out.
After 20 minutes, check that the rice is fluffy and the chicken is cooked through. If it needs more time, cover and let it cook for another 5 minutes.
Fluff the rice gently with a fork and sprinkle with fresh parsley or basil before serving.
