½ cup all-purpose flour

½ cup packed light brown sugar

¼ cup granulated sugar

¼ teaspoon ground cinnamon

¼ cup cold unsalted butter

¼ cup chopped walnuts or pecans (optional)

4 ounces cream cheese

¼ cup powdered sugar

1 teaspoon vanilla extract


Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together flour, baking soda, spices, and salt.
  • In another bowl, mix granulated sugar, brown sugar, vegetable oil, eggs, pumpkin puree, and vanilla until smooth.
  • Gradually add the dry ingredients to the wet ingredients and stir until just combined. Fold in nuts if using.
  • For the streusel, combine flour, brown sugar, granulated sugar, cinnamon, and cold butter in a bowl and mix until crumbly. Stir in nuts if using.
