Ingredients

  • 8 oz pasta (penne, fettuccine, or spaghetti)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • ½ cup carrots, julienned
  • ½ tsp red pepper flakes (optional)
  • ½ cup grated Parmesan cheese
  • ¼ cup heavy cream (optional)
  • Salt & pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  • Cook pasta according to package instructions; drain and set aside.
  • Heat olive oil and butter in a large skillet over medium heat.
  • Sauté garlic, zucchini, bell pepper, broccoli, and carrots for 3-4 minutes.
  • Add cherry tomatoes, red pepper flakes, salt, and pepper; cook for 2 more minutes.
  • Stir in cooked pasta, Parmesan cheese, and heavy cream (if using). Toss to coat.
  • Garnish with fresh basil or parsley and serve hot.
