- 8 oz pasta (penne, fettuccine, or spaghetti)
- 1 tbsp olive oil
- 2 tbsp butter
- 2 garlic cloves, minced
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- ½ cup carrots, julienned
- ½ tsp red pepper flakes (optional)
- ½ cup grated Parmesan cheese
- ¼ cup heavy cream (optional)
- Salt & pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Cook pasta according to package instructions; drain and set aside.
- Heat olive oil and butter in a large skillet over medium heat.
- Sauté garlic, zucchini, bell pepper, broccoli, and carrots for 3-4 minutes.
- Add cherry tomatoes, red pepper flakes, salt, and pepper; cook for 2 more minutes.
- Stir in cooked pasta, Parmesan cheese, and heavy cream (if using). Toss to coat.
- Garnish with fresh basil or parsley and serve hot.
