A classic, refreshing Italian cocktail, the Peach Bellini is a perfect blend of sweet peaches and bubbly Prosecco. Ideal for brunch, celebrations, or a summer afternoon!

- 2 ripe peaches, peeled and sliced
- 1 tbsp lemon juice
- 1 tbsp sugar (optional)
- 1 bottle (750ml) chilled Prosecco or sparkling wine
- Fresh mint or peach slices (for garnish)
Instructions
- Blend the Peaches: In a blender, puree the peaches with lemon juice and sugar until smooth. Strain if desired for a smoother texture.
- Chill the Puree: Place the peach puree in the refrigerator for at least 15 minutes to chill.
- Assemble the Bellini: Add 2-3 tablespoons of peach puree into a champagne flute.
- Top with Prosecco: Slowly pour Prosecco over the puree, gently stirring to combine.
- Garnish and Serve: Garnish with a fresh mint sprig or peach slice. Serve immediately and enjoy!
Notes
- For a non-alcoholic version, use sparkling water or apple cider instead of Prosecco.
- Frozen peaches can be used if fresh ones aren’t available—just blend them straight from frozen for a slushy texture.
