Instructions

  • Blend the Peaches: In a blender, puree the peaches with lemon juice and sugar until smooth. Strain if desired for a smoother texture.
  • Chill the Puree: Place the peach puree in the refrigerator for at least 15 minutes to chill.
  • Assemble the Bellini: Add 2-3 tablespoons of peach puree into a champagne flute.
  • Top with Prosecco: Slowly pour Prosecco over the puree, gently stirring to combine.
  • Garnish and Serve: Garnish with a fresh mint sprig or peach slice. Serve immediately and enjoy!
