Ingredients
For the filling:

5–6 fresh peaches, peeled and sliced (or 5 cups frozen/thawed)

¼ cup granulated sugar

1 tbsp cornstarch

1 tsp vanilla extract

½ tsp ground cinnamon

1 tbsp lemon juice
For the crisp topping:

¾ cup old-fashioned oats

½ cup all-purpose flour
-
½ cup brown sugar
-
½ tsp cinnamon

⅓ cup unsalted butter, cold and cubed

Pinch of salt
Instructions

Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.

Make filling: In a large bowl, toss sliced peaches with sugar, cornstarch, vanilla, cinnamon, and lemon juice. Pour into the baking dish.

Make topping: In a separate bowl, mix oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter until crumbly.

Assemble & bake: Sprinkle topping evenly over peaches. Bake for 35–40 minutes, until the topping is golden and the filling is bubbly.

Cool slightly before serving. Best enjoyed warm with vanilla ice cream!

No fresh peaches? Frozen or canned (drained) peaches work too.

Add chopped pecans or walnuts to the topping for a nutty crunch.
