For the filling:

  • 56 fresh peaches, peeled and sliced (or 5 cups frozen/thawed)

  • ¼ cup granulated sugar

  • 1 tbsp cornstarch

  • 1 tsp vanilla extract

  • ½ tsp ground cinnamon

  • 1 tbsp lemon juice

For the crisp topping:

  • ¾ cup old-fashioned oats

  • ½ cup all-purpose flour

  • ½ cup brown sugar

  • ½ tsp cinnamon

  • ⅓ cup unsalted butter, cold and cubed

  • Pinch of salt


Instructions

  • Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.

  • Make filling: In a large bowl, toss sliced peaches with sugar, cornstarch, vanilla, cinnamon, and lemon juice. Pour into the baking dish.

  • Make topping: In a separate bowl, mix oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter until crumbly.

  • Assemble & bake: Sprinkle topping evenly over peaches. Bake for 35–40 minutes, until the topping is golden and the filling is bubbly.

  • Cool slightly before serving. Best enjoyed warm with vanilla ice cream!

Notes

  • No fresh peaches? Frozen or canned (drained) peaches work too.

  • Add chopped pecans or walnuts to the topping for a nutty crunch.

  • To make it gluten-free, use almond flour and certified gluten-free oats.
