1 ½ cups all-purpose flour
¼ teaspoon salt
¼ teaspoon sugar
½ cup unsalted butter, chilled and cut into cubes
4 to 5 tablespoons ice water
3 to 4 ripe peaches, sliced
¼ cup maple syrup
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon
1 tablespoon cornstarch
1 egg, beaten
Turbinado sugar, for sprinkling
In a mixing bowl, combine the flour, salt, and sugar.
Add the chilled butter cubes and mix until the mixture resembles coarse crumbs.
Stir in the ice water until the dough just comes together.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
